Gobhi Manchurian Indian Style

Ingredients:

Method:

  1. Cut cauliflower into medium size pieces and keep them in a big container. Put cornflour, salt and black pepper and coat the cauliflower pieces with the same. Use some water if required.
  2. Fry them in a pan on medium flame until they turn light golden brown.
  3. Next, cut some spring onion, normal onion and chop garlic and green chilies. Keep some cut spring onion aside.(specially the green part for garnishing which we will use later)
  4. Heat some oil in a pan. Add the garlic, spring onion & green chilies and saute it for a while until the garlic leaves a nice flavor of it and the onions turn pink.
  5. Next, for the gravy add some salt, tomato sauce, soya sauce, green chili sauce and red chili sauce( According to how spicy you want) and give it a good mix.
  6. Lastly, add your fried cauliflower pieces and mix it such that the gravy covers the pieces uniformly. Cook it for about 2-3 minutes.
  7. Garnish it with some spring onion and serve hot.

Carrot Halwa ( Gajjar ka Halwa )

Method:


1.     Peel of the outer skin of the carrots and rinse them with water.
2.    Take some cashew nuts, almonds, pista and raisins. Mix them and keep them aside.
3.    Grate the washed carrots with medium size grater (not too thick and not too thin)
4.    Take a big pan and add the milk to boil.
5.    Next, add the grated carrots and mix them well.


6.    Now, we need to cook this for about an hour. This step will take maximum amount of time. Make sure you keep mixing it after every few minutes or so. This will make sure that carrots blend well with the milk. We need to cook this until all the milk evaporates and turn into khoa (https://en.wikipedia.org/wiki/Khoa) . It will look like this:




7.    Once the milk turns into khoa, add ghee and sugar. Give it a good mix.
8.    Lastly, add crushed mixed nuts to it and cook it on simmer for around 5 minutes until the ghee comes out on the surface( shiny types surface).

9.    Serve hot. Garnish it with grated khoa on the top. (Optional).

Mix Vegetable Roti Rolls

Mix Veg Rolls



Ingredients:


For main recipe:

Method:


 1. Apply mayonnaise on one side of the left over roti’s. You can either use sandwich spread mayo or normal mayo.

 2. Chop onions, cucumbers & capsicum. Add salt and black pepper according to taste. Mix it thoroughly.

 3. Next, add around 2 teaspoon of mix vegetable on the roti. Then, add the cucumber mixture on top of it.
4. Now slowly roll the roti’s with the mixture inside it and use toothpicks to hold the rolls.
5. Heat a pan and put these rolls on it. Cook it on both the sides until the roti’s become a little crusty on outside.


6. Serve it with hot and sweet tomato sauce.

Tip of the day- December 14th 2014

Bored with usual bread or rotis, Try this out :

If you have left over rotis or bread , just saute spices like saunf, red chili powder, garam masala and some salt in hot oil. Crumble the bread or rotis into small pieces and add them to the above mixture. Stir it properly till the small pieces blend with the spices and serve hot with mango or lemon pickle.It taste wonderful :)

Chocolate Chip Cookies

Servings: 12

Ingredients:

Vanilla Essence

(1 cup is approximately 220 ml)

                        

Method:


  1. Mix refined flour and baking soda properly.
  2. Take another bowl. Blend sugar and butter until it forms a nice and fluffy batter.
  3. Next, add egg and vanilla essence and blend the mixture for about 1 minute.   
  4. Now mix together the flour obtained from step 1& the batter above with the help of a spoon until all the lumps go away. Add milk, this will enhance the consistency resulting in a nice and thick mixture. Lastly, add loads of chocolate chips and give it a good mix.
  5. Preheat the oven/microwave to 180 degree celsius. Grease a tray with a little bit of butter and then place the mixture in the shape of cookies one by one. Remember to give some gaps in between because it will expand (in terms of diameter).
  6. Lastly, garnish the cookies with some more chocolate chips on the top before baking it in the oven.
  7. Grill it for at least 10-15 minutes until the surface turns golden brown. Keep checking in between.
