Besan Ke Gatte

2-3 garlic cloves and grated ginger

Cilantro leaves (dhaniya)
For garnishing



  1. Take gram flour, curd and make a dough out of it. While making dough , the hands might become sticky. Try and add more gram flour until it all comes up together as a big ball.
  2. Next, apply oil on your hands and take small balls of it and roll it in the form of cylinder.  
  3. Boil water in a pan. Now gently put these cylinder pieces in it and cook for 10-15 minutes until they become a little hard. Keep removing the white layer formed on the top surface of the water.
  4. Cut the cylinder into small pieces.
  5. For the gravy, take a tablespoon full of oil in a pan. Add jeera, garlic, ginger to it. Once it starts crackling, add cut green chilies and onions. Saute it until the onions turn pink.
  6. Then add haldi, dhaniya powder and salt. Give it a good mix.
  7. Next add grated tomatoes or tomato puree to it. Cook the mixture until it leaves oil on the surface. It will becomes nice & shiny.
  8. Lastly, add water & the Gatte pieces to it. Cook it on simmer for 5 minutes with lid on. Add water according to how thick/thin you want gravy to be. Keep in mind the gatte pieces will absorb little bit of water.
  9. Garnish it with dhaniya (cilantro) green leaves .

Bread Rolls

  1. Boil the potatoes in microwave or in boiling water on gas. Peel it and mash it completely.
  2. Cut onions into small pieces and add it to the bowl.
  3. Add all the spices and cheese mentioned above.
  4. Give it a good mix.
  5. Now gently soak bread in water from center and on sides. Make sure you don’t soak it too much that the bread starts to crumble. You can also apply water using your hands.
  6. Now put the potato mixture in the center and then fold the bread in the form of roll.
  7. Fry it and serve hot with tomato sauce & chips.

Mozzarella Cheese Veggie Balls

¼ teaspoon

Chaat Masala
1/4 teaspoon



  1.  Grate the Indian cheese (Paneer) and carrots in a bowl. Cut capsicum & spring onions in small pieces and add it to the bowl. 
  2. Now add the spices i.e. salt, red chili powder, garam masala & chaat masala. Give it a good mix.
  3. Lastly add the mozzarella cheese (shredded) & cornflour to the mix.
  4.  Now apply oil on your hands and make small balls of the mixture. Mix a teaspoon of cornflour in water. Coat the balls in it and then in bead crumbs mix.
  5. Heat the oil and fry them until golden brown. The cheese will melt inside. Serve it with hot sauce or green sauce.

Gobhi Manchurian Indian Style

Method:

  1. Cut cauliflower into medium size pieces and keep them in a big container. Put cornflour, salt and black pepper and coat the cauliflower pieces with the same. Use some water if required.
  2. Fry them in a pan on medium flame until they turn light golden brown.
  3. Next, cut some spring onion, normal onion and chop garlic and green chilies. Keep some cut spring onion aside.(specially the green part for garnishing which we will use later)
  4. Heat some oil in a pan. Add the garlic, spring onion & green chilies and saute it for a while until the garlic leaves a nice flavor of it and the onions turn pink.
  5. Next, for the gravy add some salt, tomato sauce, soya sauce, green chili sauce and red chili sauce( According to how spicy you want) and give it a good mix.
  6. Lastly, add your fried cauliflower pieces and mix it such that the gravy covers the pieces uniformly. Cook it for about 2-3 minutes.
  7. Garnish it with some spring onion and serve hot.

Carrot Halwa ( Gajjar ka Halwa )

Method:


1.     Peel of the outer skin of the carrots and rinse them with water.
2.    Take some cashew nuts, almonds, pista and raisins. Mix them and keep them aside.
3.    Grate the washed carrots with medium size grater (not too thick and not too thin)
4.    Take a big pan and add the milk to boil.
5.    Next, add the grated carrots and mix them well.


6.    Now, we need to cook this for about an hour. This step will take maximum amount of time. Make sure you keep mixing it after every few minutes or so. This will make sure that carrots blend well with the milk. We need to cook this until all the milk evaporates and turn into khoa (https://en.wikipedia.org/wiki/Khoa) . It will look like this:




7.    Once the milk turns into khoa, add ghee and sugar. Give it a good mix.
8.    Lastly, add crushed mixed nuts to it and cook it on simmer for around 5 minutes until the ghee comes out on the surface( shiny types surface).

9.    Serve hot. Garnish it with grated khoa on the top. (Optional).
