MASALA PAV WITH BHAJI

Method:

  1. Boil potatoes, peas and pumpkin and keep them aside.
  2. Take a bowl. Add Bengal gram, ¼ spoon red chili powder, black pepper powder, white pepper powder, salt and water. Mix them all properly and make a batter with medium consistency.
  3. Take a cooking pan. Grease it with oil. When its temperature rises, add mustard seeds and hing. Let it crackle for a while. Then keep the gas on simmer, put dhaniya powder, garam masala, turmeric powder(1/4 teaspoon), red chili powder and boiled potatoes(2 cups). Sauté them for 3-4 minutes. Keep it aside, let it cool. Add fresh coriander leaves to enhance the smell and flavor of this mixture.
  1. Put generous amount of oil into a cooking pan. Apply oil on you hands, make round balls from the above potato mixture, dip them in the Bengal gram batter and fry.

  1. Make sure that the temperature of oil is high otherwise; the Bengal gram coated balls will stick to your pan and will not cook properly.

  1. Now for the bhaji, take a separate cooking pan. Add some oil(any) ,little bit of cumin seeds and( garlic or ginger). Sauté them for a while.

  1. Then put some carrots, capsicum and onions. Keep a lid on it and let it simmer for 5-7 minutes till the vegetables become nice and soft.
  2.  Sprinkle dhaniya powder and salt when the vegetables are done. Now pour the grated tomatoes in it.

  1. Cook till it leaves oil all around i.e. the tomatoes are properly cooked. Now it’s the turn of all the boiled stuff… Add pumpkin, peas and potatoes (1-2).

  1. Cook them for a while. Put some garam masala, red chili powder and chili sauce (1-2 teaspoon).

  1. Give the final touch by adding lime juice, yellow butter and fresh coriander leaves.

  1. Cut your Pao in two pieces. Grill them on toaster or tawa, whatever is available.

  1. Add the balls in between the Pav and serve them with fresh bhaji.
