MALAI KOFTA

Method:

  1. Take a bowl, mash the paneer. Add kaju, some spices that you like and cornflower. It will help to bind the mixture together.
  2. Apply some oil on your hand, make balls of the above paneer mixture and deep fry them on simmer. Cook till they turn golden brown.
  3. Take another non stick fry pan.
  4. Add refined oil and garlic to it.
  5. When it starts crackling, add diced onions and sauté it for while till the onions change their colour to light pink.
  6. Now add one bowl of fresh tomatoes.
  7. Cook the above mixture till it leaves a little bit of oil on the sides of the pan.
  8. Now, cool the mixture to the room temperature and blend this to puree in the grinder.
  9. Take another pan, add some oil to it and put all the puree into it. Cook it properly for about 10-15 minutes. Add some yellow butter to it and keep on stirring it for homogenous consistency.
  10. Put some salt, white pepper powder, red chili powder, garam masala, and a pinch of black pepper powder as well.
  11. For the final touch , add some fresh cream to give it a nice and creamy texture. Add your koftas and cook on simmer for 2-3 minutes.
  12. Garnish it with fresh cream and kasuri methi.
  13.  PS:Add kasuri methi at the end after turning the gas off, otherwise the gravy can turn bitter.
