MOONG DAL HALWA

Method:

1.       Soak the Moong Dal (split yellow gram) for 2-3 hours. Remove the excess water and grind it to form a paste.
2.       Take a thick base pan. Heat oil in it. Add the above paste and stir continuously on a low flame until it turns golden brown in colour. This step is very important and it will take time. Don’t worry. :)
3.       Dissolve the saffron strands in 1 tablespoon of warm milk and keep aside. This is added to enhance the flavour and impart a yellowish tinge to it.
4.       Take another pan. Add milk and water. Cook till it turns warm. (Don’t boil it).
5.       When your mixture has turned golden brown, add the above warm solution to it and stir it continuously till all the lumps are removed.
6.       A stage will come when all the moisture will be absorbed. Now, add sugar and cardamom powder and mix it thoroughly.
7.       Garnish it with almonds, pistachios and saffron mixture. Serve hot. J


TIPS

 ü  If you don’t have cardamom powder, then take 3-4 cardamoms and take out their black seeds. Pulverise them and your cardamom powder is ready.
 ü  When you add the paste in your pan, it will initially stick on the surface, but you have to stir it continuously  and it will eventually blend with the oil.
 ü  Make sure before you grind your moong dal, drain the excess water.
